Roasted Vegetable Soup

Serves4-6 Prepare15 Mins Cooks5 Mins

Ingredients:

  • 2 Tsp Olive, Coconut or Avocado Oil
  • 1 Onion (finely chopped)
  • 1 Clove Garlic (minced)
  • 1 Pint Chicken or Vegetable Stock
  • 1 Cup Each of Roasted Potatoes, Parsnips and Carrots
  • Salt and Pepper (to taste)

Method:

Directions:

1. Simply sautee the onion in the oil in a large pan until soft before adding in the garlic and cooking for a further minute.

2. Add in the veg, the stock and bring to the boil.

3. Allow to cool and blend until nice and smooth before serving up.

4. Season as you like.
