A tasty dessert that's perfect for dinner parties!

Ingredients (Serves 6):

  • 5 tbsp Lotus Biscoff Smooth
  • 3 heaped tbsp icing sugar
  • 120g Lotus Biscoff biscuits
  • 400ml whipping cream
  • 3 tbsp marscapone

Method:

  1. Whip the cream.
  2. Mix the marscapone, Biscoff Smooth and icing sugar together.
  3. Carefully fold in the whipped cream using a spatula.
  4. Crumble the Biscoff and add in to the mixture.
  5. Place the mixture in a rectangular silicon mould, or line an ordinary cake tin with cling film to make it easier to remove the log.
  6. Cover the top with cling film and leave in the freezer overnight to become firm.
  7. Remove the ice cream log from the freezer 15 minutes before serving and garnish to your liking - for instance - with Biscoff crumbs.
