BBQ Chicken


  • 1 whole chicken
  • 100g unsalted butter
  • 2 garlic cloves, crushed
  • Few sprigs of Thyme
  • 1 lemon, zested and ½ juiced
  • 1 tbsp sea salt
  • 1 tsp brown sugar
  • ¼ tsp of black pepper
  • ½ tsp of garlic granules 


Step 1.   Make your Thyme butter by mixing the butter, Thyme, garlic and lemon. Push this underneath the skin of the chicken to form an even layer 

Step 2.   Next mix your rub ingredients together, sea salt, brown sugar, black pepper and garlic and proceed to coat your chicken and massage it in

Step 3.   Optional step is to chill your chicken for 4 hours if you’re prepping in advance! If this is a spontaneous BBQ then don’t worry yourself and just crack on to step 4

Step 4.   Heat up your BBQ and get that chicken cooking! 

Step 5.   Once it’s cooked and crisped up, leave to rest for 5-10 minutes in foil and then squeeze the other half of the lemon juice onto it before carving
