Serves 2, 12 minutes cooking

Sticky Rice is one of the best side dishes for any Thai main course from curries to stir fries and we have a quick and easy recipe for you so you can make it at home with minimal fuss.

Ingredients

  • 85g/3oz creamed coconut
  • 110g/4oz basmati rice
  • 250ml/8¾fl oz hot water

Method

  1. Put the creamed coconut, rice and hot water into a medium saucepan. Bring to the boil, then reduce the heat and simmer gently for 10-12 minutes, or until the rice is tender. Stir the rice occasionally and add any extra water if necessary.
  2. Remove from the heat and transfer to a large bowl to serve with your chosen Thai dish.
