Serves 8, 10 minutes preparation
Brandy Butter is a traditional Christmas Pudding accompaniment and the addition of vanilla gives it a delicious flavour. It is perfect for serving with warm mince pies too and you can make it in advance to prepare for Christmas as it will freeze for up to one month.
- 200g Salted Butter
- 6-7tbsp Brandy
- 180g Icing Sugar
- 1tsp seeds from a Vanilla Pod or Vanilla Extract
- Beat the butter, vanilla and sugar together until light and fluffy. Next, whisk in the brandy one tablespoon at a time to make sure you do not split the mixture. Top Tip: Make sure you taste the mixture throughout to ensure that it contains the right amount of randy for your taste.
- To serve, spoon the brandy butter into a serving bowl and chill for 1 hour or for up to 3 days.
Top Tip: The brandy butter can be made in advance and then frozen for up to a month.
