Directions:1 Heat the coconut oil in a large pan on a medium heat and add the onions and cook for around 10 minutes until softened.
2 Add the garlic and ginger and cook for further 2 minutes.
3 Add all of the remaining ingredients and mix through.
4 Reduce the heat to low, cover and simmer for 30 minutes stirring occasionally.
5 Remove the lid and simmer for a final 15 minutes.
To boost protein to this meal, add in some beans to keep it veggie OR add some pre-cooked chicken chunks!
