Lentil Curry

  • 1 Tbsp Coconut Oil
  • 2 Onions, thinly sliced
  • 1 Tsp Chilli Powder
  • 400g Chopped Tomatoes
  • 1 Tsp Cumin
  • 1 Tsp Garam Masala
  • 10g Garlic (pressed)
  • 10g Ginger (pressed)
  • 400ml Light Coconut Milk
  • 200g Red Lentils (rinsed)
  • 500ml Vegetable Stock



1 Heat the coconut oil in a large pan on a medium heat and add the onions and cook for around 10 minutes until softened. 

2 Add the garlic and ginger and cook for further 2 minutes. 

3 Add all of the remaining ingredients and mix through. 

4 Reduce the heat to low, cover and simmer for 30 minutes stirring occasionally. 

5 Remove the lid and simmer for a final 15 minutes. 

 To boost protein to this meal, add in some beans to keep it veggie OR add some pre-cooked chicken chunks!
