Vanilla cupcakes

Ingredients

Cupcakes:

  • 170g self-raising flour
  • 170g of butter
  • 170g of caster sugar
  • 3 eggs

Buttercream:

  • 1 tsp of vanilla extract
  • 200g butter
  • 400g icing sugar

Toppings: sprinkles, chocolate buttons, strawberries

Method

Step 1.  Weigh out the butter and caster sugar then mix together until a pale and creamy consistency

Step 2.  Weigh out the flour into a separate bowl and then in a 2nd bowl crack your eggs and whisk together

Step 3.  Add in the egg and flour a little at time, stirring in-between, until everything is added. Don’t over mix

Step 4.   Share out the cake mixture into your cupcake cases

Step 5.  Put into a preheated oven at 180 degrees for 20-25 mins. Check your cupcakes are cooked by inserting a cocktail stick. If cooked, it will come out clean.

Step 6.  Whilst your cupcakes are cooling, it’s time to make the buttercream! Cream together your butter, icing sugar and vanilla extract, the longer the better for super soft and tasty buttercream

Add a generous dollop to the top of each cooled cupcake and then it’s topping time! This is where you can really have the fun and pretty much add whatever you would like. We went super simple with sprinkles, but go wild! Don’t forget to tag us in your creations on our Facebook or Instagram page.
