Three Bean Roast


    1 tbsp of vegetable oil

    1 small onion, finely chopped

    3 garlic cloves

    2 Portobello mushrooms, finely chopped

    1 medium carrot, grated

    400g cooked kidney beans, rinsed

    400g of cooked lentils, rinsed

    1 tbsp of soy sauce

    2 tbsp of mixed herbs

    135g of rolled oats

    Salt & pepper


Step 1. Preheat oven to 185 degrees and line a loaf tin with grease proof paper

Step 2. Heat oil in frying pan and cook off the onion and garlic until soft

Step 3. Add in your mushrooms and carrot and cook for another 5 minutes

Step 4. Pop in the rest of the ingredients into the pan and use a masher to combine – be careful not to over mash, just until the mixture comes together

Step 5. If the mixture is too dry then add a little bit of water, or if you find it’s too watery then add in some more oats

Step 6. Transfer the mixture into the loaf tin and cook for 40-45 minutes

Step 7. Then you’re ready to serve!
