Serves 4, 5 minutes prep, 10 minutes cooking

These are a great alternative to traditional beef burgers and are a tasty, inventive way to turn a couple of tins of tuna into a fantastic meal.

  • 2 cans of tuna in brine, drained
  • 1 can sweetcorn
  • 60g bread
  • 2 spring onions or half a small white onion
  • 1 egg, beaten
  • Handful of fresh flat leaf parsley (optional)
  • 2tbsp oil, olive or vegetable for frying
  • Mini pittas/burger buns, lettuce leaves and tomato slices to serve

  1. Tear the bread and place in a food processor. Mix until it has formed fine breadcrumbs. Empty into a bowl then roughly chop the spring onions/half a white onion then blitz in the food processor along with the fresh flat leaf parsley (optional) until finely chopped then add to the breadcrumbs. Finally, add half of the sweetcorn to the food processor and blitz until finely chopped and add o the bowl.
  2. Add the drained tuna, the rest of the sweetcorn and some salt and pepper to taste to the bowl and mix well. Start to add the beaten egg bit by bit mixing well until the mixture becomes sticky and can be formed into 4-6 burgers.
  3. Heat your BBQ, then grill the burgers for 3-5 minutes on each side until cooked through and lightly golden on the outside.
  4. Serve in burger buns with lettuce and tomato or, alternatively, with boiled new potatoes and a fresh salad.
